Delicious Comfort Food

Creamy Gorgonzola-Pasta



As you probably know by now, I absolutely enjoy a fast pasta dish. This creamy sauce has comfort food written all over it and it tastes very 'Italian'... Another added bonus.
My brother and I loved this dish growing up, and ever since I moved out the Gorgonzola- sauce has been a 'lazy Dinner' staple in my kitchen. There is something to be said about an easily prepared dinner after an exhausting day, that is still very delicious.





Ingredients:
  • 1 onion 
  • 2 cloves of garlic 
  • Gorgonzola, 200g, 7 oz
  • whipping cream, 200ml, a litlle less than a cup
  • 2 eggs 
  • 3 tbs milk 
  • 2 tbs Parmesan 
  • Salt, pepper 
  • Olive oil 
  • Pasta 


First, chop the onion and garlic cloves and soften them in a large pan. 
The sauce will take approximately 15 to 20 minutes, so please time your pasta accordingly. Mine needed 17 minutes to boil, so I started them almost immediately.


Next pour the cream to your onions and let it simmer for a couple of minutes. Crumble the Gorgonzola. I used a fairly savoury one so 200g were enough, but you could always add more.


Gently stir the sauce until the Gorgonzola is completely melted.
Now mix together the eggs, the Parmesan, the milk and salt and pepper and whisk well and put aside.
As soon as your pasta is done add some of the water to your sauce (4 tbs or something like that) and drain them.
Add the pasta to your sauce, take the pan of the heat and stir in your egg-mixture. Maybe, season with a little bit of salt and pepper.


That's it :) ... easy, huh?
