A rainy day staple

For me that would be soup. I just love the comfort and warmth a soup offers... I know that I might have a strange relationship with food, but you can't really tell me that I'm wrong about that.

A winter and autumn favourite is pumpkin soup. So whenever I come across a new recipe for a hearty pumpkin soup, I try to put my own spin on it.

The following soup was inspired by Jamie Oliver (original recipe can be found in his newest book), especially when it came to seasoning.

But as always - I changed it a bit.

Red lentil soup.

Somehow S kept craving Asian food, but I could not even stand the smell, let alone all the flavours. So we skipped any food in that general food category.
But now, I don't mind so much... Don't talk to me about sweet/sour dishes, but I am fine with anything of the "curry-variety".

A while back I read this recipe for a spicy red lentil soup. I know that the recipe called for some coconut cream, but unfortunately I did not bookmark the page. And coconut cream makes a dish 'Asian-influenced' right?

When it is raining...

... it is time for soup.

Yesterday we had one of those rainy, dark grey days. On days like that I just want to curl up with a blanket and a book and a nice cup of coffee or tea. Since that was not in the cards for me I had to settle for a nice steamy bowl of soup for dinner.
Wich was more than fine, because I got to use summer-vegetables. And those are so delicious in a soup. My aubergine obsession struck again and I built the soup around a white aubergine and a zucchini.
It turned out really nice and smooth and the gorgonzola as topping added a nice spicey component to the soup.

Roasted Red Pepper-Tomato Soup

Sometime last week (or maybe the week before) I read this mouth-watering recipe over on Tea&Cookies...  And it inspired me. It sounded amazing and I wanted to do something similar. I guess this happens a lot when you read so many food-related blogs.

So I made a soup like that one when I had a group of girls coming over to watch some silly tv.
I just added a few ingredients here and there.

You’ll need:
  • 2 red peppers
  • 2 onions
  • some celery
  • 4 small potatoes
  • 500g diced tomatoes (canned)
  • some garlic
  • rosemary, thyme
  • olive oil
  • vegetable broth, if needed
  • crème fraîche, 1bsp
  • salt, pepper
